Gastrograph AI is a machine learning and artificial intelligence platform for modeling human sensory perception and predicting consumer preference of food and beverage products. Gastrograph AI helps producers to model, understand, and optimize the flavor, aroma, and texture of their product for target consumer demographics and cohorts. Gastrograph AI enables robust quantification of the underlying flavor profile of products and their raw ingredient components for predictive new product development, brand optimization, and cognitive marketing.
Jason Cohen - Founder & Chief Executive Officer
Before starting Analytical Flavor Systems, Jason was the Founder and Executive Director of The Tea Institute at Penn State, which oversees 20+ researchers in 5 fields of study in traditional Chinese, Japanese, and Korean Tea. Jason did his research in sensory science, machine learning, and artificial intelligence - eventually developing the Gastrograph system after 3 1/2 years of research. Jason is a professional coffee, tea, and beer taster, and when he is not trying new products, he enjoys rock climbing, ice climbing, and fencing.
Francois Aubin - Data Scientist
Francois graduated with a Ph.D. in physics from McGill University. He has built and flown a balloon-borne telescope to study the early Universe and has analyzed the data as a researcher at University of Minnesota. He now applies his data science skills to improve the flavor models of Analytical Flavor Systems.
Nabeel Sarwar - Data Scientist
Nabeel completed his Bachelors of Astrophysics from Princeton University, and he is currently completing his Masters in Data Science from New York University. With carribean flare, he arrives on the scene with a wide amount of interests that all fall squarely within geekdom. When he's not working on problem sets or coding, he is usually playing DOTA, watching horror films, writing poetry, or drawing comics.
Ryan Ahn - Director of Research & Development, Founding Team
Ryan is the second Executive Director Emeritus of the Tea Institute at Penn State. He studied chemistry at Penn State and is a former researcher at the Badding Group, a solid-state and high pressure materials chemistry lab at University Park. In his free time, he enjoys spending time exploring the ramen offerings of New York, visiting art museums, and drinking tea.
Gayatri Mullapudi - Product Manager & Lead UX Designer
Gayatri is passionate about creating products that solve problems and delight users. Prior to joining Gastrograph, she worked with a variety of company types including B2B/SaaS, AI, Sports, and Consumer. She is a graduate of the University of Michigan (Go Blue!) and has a Master’s Degree from Stony Brook University. In her spare time, she can be found running around Prospect Park, reading a book, practicing yoga, or trying out a new restaurant.
Anthony Crognale - Director of Engineering
Anthony graduated from Penn State University with a degree in computer science and is a former member of the Tea Institute. Prior to joining AFS, Anthony began his career in combustion simulation and high performance computing at SpaceX. He has also worked at Knewton, an adaptive learning technology company, and most recently, trueDigital— a fintech company building solutions for asset tokenization and exchange. Outside of work, Anthony enjoys powerlifting and experimenting with urban agriculture.

Kevin Snow - Strategy and Business Development
Kevin has been in strategy, business development and marketing in both technology as well as capital markets for most of his career. He is former head of sales and marketing at Lime Brokerage, a trading and technology firm spun out of Tower Research Capital based in NYC. He has a BS from University of Virginia, and an MBA from the University of Notre Dame. Kevin lives in NYC with his wife and twin boys.
Zongjun Li - Account Manager for Asia Pacific 亞太區域經理
Zongjun is the third Executive Director Emeritus of the Tea Institute at Penn State. He has a B.S. degree in Geospatial Science (GIS) at Penn State and is an affiliate researcher in Geoinformatics and Earth Observation Laboratory (GEO) in the College of Earth and Mineral Science. Zongjun is a great fan of scotch, cigar, wine, and sake. In his free time, he likes to read, meditate, and listen to Japanese underground jazz.
Candace Shiree - Head of Business Operations
Candace’s super power is all things operations and strategy. She loves process improvement and organization. She graduated from the Simon School of Business with a Master’s in Management, and credits an entrepreneurship and innovation class with setting her sights on working with start-ups. When Candace is not thinking of a better way to do something, she is traveling , eating amazing food, and shares both with friends and family!
Brandon Grimes - Business Operations
Brandon is from Rochester New York and a recent graduate of The American Musical and Dramatic academy. When Brandon is not in the office you can most likely find him composing music and/or looking for a good book to read!
Gwen Lauer - Business Operations
Gwen graduated from Penn State with a Bachelor of Science in Psychology. She wears many hats to ensure all office operations run smoothly - from designing the office, helping run panel or to taking iPads to the doctor, the variety of work keeps her on her toes! Outside the office, she spends her time outdoors, painting, or traveling to new places.
Aislynn Van Clief - Creative Director & Founding Team
Aislynn graduated with a Bachelor of Arts degree concentrating in New Media from Penn State University. When she isn’t designing for Gastrograph, she enjoys the pursuit of artisan beverages. Everything from slinging ‘spro to whisking matcha has caused her agility and swiftness to carry over into her artwork. Oh, and she can be found playing with exotic animals from time to time. She isn’t called S.uper Q.uick U.ser I.nterface D.esigner for nothing.
